Chicory salad with pear, apple and blue cheese

Ingredients
- 4 stalks of chicory/red chicory (preferably mixed)
- 2 apples
- 2 pears
- 50g. spicy blue cheese
- 50g. crème fraiche
- fresh parsley/ chervil/ tarragon
- 5 tbsp. olive oil
- 4 tbsp. cider vinegar
Method of preparation
Clean the chicory and peel the leaves off the heads. Wash the apples, cut them into quarters, and then into strips. Clean the pears and cut them into eighths. Place the chicory leaves, apple, pear, and garden herbs in a large bowl. For the dressing, blend the blue cheese, crème fraîche, olive oil, cider vinegar, and 6 tablespoons of water for about 15 seconds in a blender. Taste the dressing to check if it's sour enough to counter the bitter taste of the chicory, and adjust the seasoning if necessary. Pour the dressing over the salad and toss well. Crumble a few more walnuts over the salad.
