Chicory from the wok with goat cheese, honey and thyme

Ingredients
- 1kg. chicory
- 150g. goat cheese
- 75g. pine nuts
- 4 tbsp. liquid honey
- 2 tbsp. olive oil
- 2 tsp. dried thyme
- salt and pepper
Method of preparation
Wash the chicory and cut the heads lengthwise into quarters. Then, roast the pine nuts in a dry wok until golden brown and place them on a plate to cool. Heat the olive oil in the wok and stir-fry the chicory for about 1 minute on high heat. Add the honey and thyme and continue to stir-fry the chicory for about 2 to 3 minutes: until they are cooked and the honey layer turns light brown. Season the chicory with some salt and pepper. Then, remove the chicory from the wok and place the pieces in a dish. Cut the goat cheese into small pieces and sprinkle it along with the roasted pine nuts over the dish. Serve immediately.
