Tagliatelle with chicory

Ingredients

  • 800g. chicory
  • 3 spring onions
  • 250g. smoked bacon
  • 300g. groene noodles
  • 4 heaping tablespoons of crème fraîche
  • 1 tbsp. white wine vinegar
  • 3 tbsp. olive oil
  • salt and pepper

Method of preparation

Cook the tagliatelle according to the package instructions. Clean the green onions, cut 2/3 into 1 cm pieces, and finely chop the remaining greens. Wash the chicory and cut the heads lengthwise into thin strips. Toss them in a large bowl with 2 tablespoons of oil, the vinegar, and add pepper and salt to taste. Fry the bacon strips in a frying pan on high heat for 4 minutes. Lower the heat and add the 1 cm pieces of green onion and the chicory to the bacon, frying them together for 5 minutes. Drain the pasta in a colander and mix it with the chicory. Divide the pasta onto 4 plates, place a tablespoon of crème fraîche on top, and sprinkle the finely chopped green onions over it.
