Grilled chicory with Parma ham

Ingredients

  • 4 stalks of chicory
  • 4 slices of Parma ham
  • 75g. (blue mold) brie
  • 1 tbsp. white wine vinegar
  • 4 tbsp. olive oil
  • salt and pepper

Method of preparation

Preheat the grill to its highest setting. Clean the chicory and parboil it for 2 minutes in plenty of water. Halve the chicory heads lengthwise and place them in a greased baking dish. Drizzle the chicory with 1 tablespoon of oil. Cut the Parma ham into strips and lay them on the chicory. Grill the chicory for about 8 minutes. Cut the Brie into 8 slices. Whip up a dressing from 3 tablespoons of oil, white wine vinegar, pepper, and salt. Arrange the chicory on 4 plates and distribute the cheese and dressing over the chicory.

Tip: Delicious as an appetizer or side dish.
